Meet Our Executives
Our executives have dedicated themselves to the health and well-being of residents in long-term care facilities. Combined they have over 60 years of experience in the health care food service management, and nutrition management and care in the healthcare industry.

Dorothy Stewart has spent her entire career serving the healthcare industry—beginning in 1969 as Chief of Clinical Nutrition Services at Holy Family Hospital—by providing nutritional care and education for patients and residents. For over 15 years, she has served as the President of Nutrition Care Systems, where she leads a team of dietitians, which provide expert nutrition and food service guidance to a wide variety of long-term care facilities and healthcare agencies.

After almost ten years as an independent consulting dietitian, Dorothy joined Mavin Enterprises, a healthcare facilities management company, as Corporate Consultant Dietitian where she coordinated the nutrition care and food services in a multi-facility—skilled and intermediate care throughout multiple state. Dorothy’s results were impressive--increased resident satisfaction, significant labor and raw food cost savings from menu and procedure simplification, and greater state and federal regulatory acceptance of liberalized diets for facility residents.

As a culmination of all her experiences and education, Dorothy established Nutrition Care Systems, Inc. in 1993. The company provides services to address the special needs of long term care industry administrators and owners, and has enjoyed impressive growth from serving its clients.

Dorothy is a frequent lecturer and sought-after speaker within the industry. She is actively involved in the American Dietetic Association, Illinois Dietetic Association, Illinois Health Care Association, the National Environmental Health Association, the Life Services Network, and the Illinois Council of Health Care Facilities this year.
Kimberlie’s 25-year career is best characterized by her concern for the dietetic care of seniors in long term care and assisted-living facilities, and teaching proper nutrition.

Her extensive healthcare industry experience began in 1984 when she joined Glendale Heights Community Hospital and was quickly promoted to foodservice supervisor where she managed kitchen staff, instructed patients on diet, and assisted the director with payroll, scheduling, catering and budgeting.

She honed her clinical dietetic and nutritional skills at Saint Matthew’s Lutheran Home, Elmhurst Clinic and Lutheran Home for the Aged, where she was responsible for nutritional assessments of residents, development and implementation of dietary care plans, resident and staff education, and supervision of dietary aides, diet technicians and dietetic students.

As a way to help more facilities and seniors, she joined Debra Miller and Associates as a consulting dietitian. She moved to Nutrition Care Systems, Inc. when the two companies merged.

Today, as a senior consultant, she uses her vast knowledge to help long term care and assisted-living facilities meet their goals of resident vitality through proper nutrition, dietary service excellence and facility efficiency. Additionally, Kim is involved in the training and support of staff dietitians, and is called on to help facilities solve special problem areas in dietary operations and dining services.
Staci is the regional manager for the Chicagoland territory of Nutrition Care Systems where she helps facilities solve problems in all areas of nutrition and food service. As a practicing nutrition consultant, Staci is also involved in menu development, the training and support of staff dietitians as well as to clients. Her passion is serving clients and helping them provide the best in nutrition to their residents.

Prior to becoming a dietitian Staci held various positions in the long-term care industry including working as a Certified Nursing Assistant, and also working in a long-term care kitchen as a dietary aide and prep cook. It was here that she developed a passion for food service and senior living.

Staci worked with homebound seniors by preparing and delivering nutritious meals. In this role, she helped clients maintain independence while teaching them fundamentals of proper nutrition. She was also involved in menu planning and food safety.

Staci graduated and received her Masters Degree in Nutrition in 2003. Directly after graduation she began her career as a dietitian with Nutrition Care Systems, and quickly developed her clinical skills as well as her understanding of CMS and state regulations. Since then Staci has continued to draw upon her well-rounded background and has been promoted to various positions within Nutrition Care Systems, most recently as Vice President.
