As of October 1999, the Illinois Department of Publich Health Food Service Sanitation Code requires all establishments and organizations that prepare and serve food shall be under operational supervision of a certified sanitation manager. In addition, for high risk facilities, the sanitation manager be on premises at all times when food is being served, except under certain circumstances. To meet the certification requirement, every business or establishment which serves food must have at least one individual who has completed 15 hours of instruction from a licensed sanitation instructor and then successfully pass the Food Service Sanitation Manager Certification Exam. |
